Spelled: gluten and properties

If you are looking for agluten-free cereal, you should look away from spelled: this cereal contains gluten although to a lesser extent than wheat. Some people who cannot tolerate wheat, however, are able to digest spelled well.

Not just the content ofspelled glutenit is lower than that of wheat but also its composition is different. For this reason, spelled is considered less irritating than wheat, however remains a food unsuitable for celiacs.

Gluten: what it is

Theglutenis the set ofproteinsreserve contained in some cereals. These proteins form a viscous and elastic reticulum that originates in contact with water.

Thereserve proteinit'sgliadinsand theglutenins: these are the ones that form that reticular matrix known asgluten. Gluten is essential for flour: it is the substance that affects the elasticity of the dough obtained.

Spelled: gluten

Thespelled, as well as many otherscereals, contains a percentage distribution of macronutrients divided as follows:

  • 7-10% lipids
  • 64 - 68% carbohydrates
  • 12 - 15% protein

When it comes tospelled, these percentages can vary a lot according to the species and the different varieties. In fact, we speak of:

  • einkorn spelled
  • spelled (granofarro)
  • spelled

The composition of nutrients is different in each species even though the amino acid profile of the protein composition is similar to that of wheat (wheat). For those who are "new" to the topic, amino acids are the building blocks of proteins. Unlike wheat, spelled has a higher quantity of glutamic acid and proline. It also includes the essential amino acid methionine, lacking in almost all other cereals.

Like wheat, spelled is deficient in the amino acids lysine, threonine and leuicine. Of all the cereals, only rice can include proteins rich in lysine. Rice is a gluten-free cereal.

Spelled proteins are localized in the endosperm of the kernels, together with starch and water-soluble dietary fibers. The protein composition is classified into three groups: we talk about metabolic, structural and reserve proteins. They are the reserve proteins responsible for the content ofgluten in spelled.

Always wanting to compare spelled to wheat, spelled has higher levels of phosphorus, potassium, pyridoxine (one of the forms of Vitamin B6) and beta carotene.

Gluten-free spelled

Is there a gluten-free spelled? No. None of the varieties of spelled selected are suitable for diet by those suffering from celiac disease.

Thespelledit is undoubtedly moredigestiblecompared to wheat and, in particular, thewholemeal einkorn spelled it may be suitable for those with a slight gluten intolerance. TheEinkorn spelled contains glutenbut the percentages are minimal (they fluctuate around 1%).

Spelled: gluten intolerance

The digestion of proteins begins in the stomach, initiated by an enzyme known as pepsin; digestion of gluten takes place in the intestine where enzymes known as trans-glutaminases break down the long protein chains into smaller sub-units.

In those who suffer fromceliac disease(DiseaseCeliac or Gluten intolerance), the digestion of gluten is prevented so much that this substance is toxic to the point of causing inflammation of the intestinal villi. The villi are small fingertip protrusions (continuous folds) which, once inflamed, are no longer able to absorb any nutrients or even assist digestion. Here are all the symptoms of celiac disease or celiac disease.

The gliadins of spelled would have a lower toxicity at the level of the villi of the intestinal mucosa.

There is another disease related to the presence ofgluten identified with the English acronym NCGS (Non Celiac Gluten Sensitivity) or GS (Gluten Sensitivity).
