Before seeing therecipes with beets, let's see how they can be cleaned without producing unnecessary waste.

How to clean beets

On the market we findchard(also colored beets) and leaf beets, the principle for cleaning is the same.

How to clean beets? Just cut the part that holds the bundle together and remove the ruining outer leaves.

You will then have to rinse everything off with plenty of fresh water.

On the web, there are those who recommend removing the beet leaves one by one. In reality this is not necessary at all because once the final part of the head is cut, the leaves will detach automatically.

Forclean the chardyou will then have to take a next step. Since the ribs are very fleshy, to reduce cooking times and make them uniform with the more tender leaves, I recommend cutting the ribs in the long part. In this way the cooking times will be uniform both for the fleshy part (precisely, for the ribs), and for the more tender leaves.

Bring the water and salt to a boil and cook the chard in boiling water for 5 minutes. You can also lengthen or even shorten cooking times according to your taste preferences. Personally I like them when the leafy consistency has not been completely lost, so for me 4-5 minutes is enough for the beets for leaves and 6-7 minutes for those from the coast. Officially, however, the optimal cooking times are slightly longer. You choose, based on your tastes, how you intend to proceed.

Cooking times:6-7 minutes for leaf beets
Cooking times: 8-10 minutes for beets from the coast

Once cooked, drain the chard and you can eat them both hot and cold, seasoned with extra virgin olive oil added raw and ... I also prefer lemon juice! Perfect side dish for red or white meats, or to enrich a potato salad.

How to cook chard in a pan

Once boiled, the chard (rib or leaf) can be sautéed in a pan with a drizzle of boiling oil.

To flavor: heat a little extra virgin olive oil in a pan, add the boiled and well-drained chard, this process should only take a couple of minutes, so it is important to use well-drained chard.

Alternatively you can preparestewed beetsin the pan: the pan must be large and very large. Put a cm of hot water on the bottom, add the chard that should not be submerged in water, add salt, cover the pan and finish cooking perhaps by adding crushed garlic. In practice you will get boiled beets but with very little water.

How to cook beets in the oven

For thechard recipebaked, I advise you to strictly use chard.

The chard, in fact, like cauliflower or fennel, can be cooked in the oven au gratin!

Here are the ingredients for 4 people:

  • 1 kg of chard or chard
  • 300 gr of sweet cheese of your choice (Asiago, Belpaese ...)
  • 180 gr of breadcrumbs
  • 80 gr of grated Parmesan cheese
  • Salt to taste.
  • Extra virgin olive oil q.s.

Prepare the boiled chard, eliminate all excess water and coarsely chop it. Considering baking in the oven, keep it low with the cooking times in the pot.

In a bowl, pour the breadcrumbs and Parmesan.

Grease the bottom of a baking dish with extra virgin olive oil and cover it with a thin layer of breadcrumbs and Parmesan.

Arrange a first layer of chard and cover with the cheese cut into chunks. You can make several alternating layers or concentrate the cheese in the center, as you like. Continue until the last layer is covered with the remaining beets.

Cover the mixture with a generous mixture of breadcrumbs and Parmesan.

Bake in a preheated oven at 180 ° for about 15 minutes: you will need to monitor cooking to prevent the breadcrumbs from burning, it must appear blond and dry!

Baked beets are best enjoyed hot or just warm.
